Ethiopia - Floral · Stone Fruit · Berries
Yabitu Tume comes from the highlands of Uraga, one of the highest coffee-growing areas within Ethiopia’s Guji region. At 1,900 to 2,300 metres above sea level, Ethiopian Heirloom varieties grow in a cool mountain climate where cherries are given time to develop slowly.
The coffee is produced by smallholder farmers surrounding Yabitu Tume and brought together at the local washing station. A washed process, including fermentation and soaking before drying on raised beds, brings definition to the naturally aromatic character of these high-grown coffees.
This is an elegant expression of Guji: distinctly floral, with jasmine at the front of the cup, followed by peach, berries and a touch of tropical fruit. As it develops, a delicate black-tea character adds structure while keeping the finish clean and refined.
